INSTRUCTIONS:
  • ⁣Remove and chop the flesh of 1/2 the roasted pumpkin. Set other half aside.
  • ⁣In a large bowl, toss chopped pumpkin, swiss chard, roasted plums, barley blend, Cherry Balsamic & pumpkin seeds. Season generously. ⁣
  • ​​⁣Transfer salad into the second half of the roasted pumpkin, using it like a bowl. ⁣
  • ​Drizzle dressing on top (to taste.)
  • ⁣Optional: top with your favourite vegan soft cheese & more pumpkin seeds.
  • ENJOY!

Cherry Balsamic
INGREDIENTS:
  • ⁣1 pumpkin, halved + roasted⁣
  • Pumpkin seeds, roasted⁣
  • Wheat, barley & oat blend, cooked⁣
  • Ontario blue plums, roasted⁣
  • Swiss chard, chopped & lightly sautéed ⁣with Cherry Balsamic⁣
  • Salt + pepper⁣​
