DIRECTIONS:

1. Slice the kale into 1/4-inch thin strips
2. Combine the kale with a drizzle of oil (of choice) and salt.
3. With your hands, massage the kale for approximately 3 minutes, until kale softens.
4. Toss with the lemon juice and grated cheese and add tomatoes
5. Add dressing to taste

INGREDIENTS:

• 1 bunch kale (with ribs removed)
• 1/2 tsp Himalayan pink salt
• 1/4 cup of roasted cherry tomatoes
• 1 tbsp freshly squeeze lemon juice 
• 1/3 cup fresh grated Parmesan cheese 
• Dressing to taste
